Beautiful Biscuits

 Christmas is around the corner (ok maybe a couple of corners but it sure is close!) and I want to know who is ready to get their cookie on? Nothing says Christmas more than the aroma of freshly baked gingerbread wafting through your house. 
This festive season the stunning book Beautiful Biscuits by royal icing expert Tessa Whitehouse (B. Dutton Publishing) is taking centre stage on my benchtop.

Tessa has dedicated a whole chapter in her recently released book to “Festive Fun”. From edible cross-stitched Christmas trees to adorable Christmas puddings, these gorgeous biscuits are the perfect way to adorn Christmas dessert buffets. 

Beautiful Biscuits isn’t only for the holiday season: its pages are packed with many original decorated biscuit designs covering sport, transportation, music, animals and much more.

There are three-dimensional biscuits and biscuits with intricate detail and they can all be recreated following Tessa’s easy-to-follow step-by-step instructions and photographs. “I love the fact you can make delicious, unique and attractive treats with relatively limited equipment and experience,” Tessa says.
 
As an Accredited Demonstrator for the British Sugarcraft Guild and a teacher at various outlets including Squires Kitchen International School, Tessa says her book aims to teach other decorators to think outside the box: “I want to inspire people to go away and play so they can create their own designs from scratch”. 

Royal icing is Tessa’s passion and it’s evident in Beautiful Biscuits as she takes you on an exciting edible journey: “It never ceases to amaze me what can be created with this
sugar medium”.

Tessa also reveals her secrets for baking the perfect biscuit to decorate: “For royal icing the biscuit must have a flat, smooth surface and not spread during the baking process. I’ve included my favourite recipes in the book which are simple to make and ideal for decorating”.

A Take on Cake With: Raewyn Read - New South Wales, Australia

Raewyn Read is emerging as one of Australia’s popular caking personalities.

She’s been invited to participate in an assortment of international collaborations including The Tim Burton Cakenweeie Project.

This year Raewyn is taking her career to another level focusing on her business Cakes by Raewyn and producing jaw dropping cakes such as this “Escher” inspired cake.                                                                  
        






















This year Raewyn will be packing her bags and heading overseas to spread her caking techniques to the rest of the world. 
Marianna’s Caking Me Crazy caught up with Raewyn, here’s what she had to say.


How did you first become introduced to the art of cake decorating?

I wanted a cake for my youngest daughters first birthday but money was really tight so I decided to try it myself. I watched YouTube videos and Googled like a mad woman! Two weeks later I made my very first cake…a two tier buttercream iced vanilla cake with pink fondant daisies. My friends and family were very kind about it and actually started putting in requests! J



When did you start your business and how many years have you been in the Cake Industry?

I don’t know when I really ‘started’ as such….I truly kind of fell into it all. I suppose the first really business minded move I made was releasing my first tutorial for purchase…it was SO nerve wracking but very exciting! I just celebrated my 3rd year of cake decorating when Jasmine turned 4!
  
What do you enjoy most about running a cake business?

I LOVE the part I’m doing now, traveling and getting to meet lots of wonderful people! I really enjoy the creative process of making cakes but it can get a little lonely…I worked mostly at night when the kids were in bed so that’s VERY different to teaching. My family laughs at me because I’m becoming a bit of a social butterfly haha!
  
Is there one cake that you get asked to create a lot?

Ah yes….shoes of course and I have done my Wonder Woman design a few times, and my Tinkerbell, but I do try to keep creating new designs so people don’t get bored with what I do J



What’s the most favourite cake you have made?

My most favourite cake would have been Catwoman…even though she’s not actually cake! The whole Tim Burton Collaboration was amazing to be involved in and being able to be completely self-indulgent and make her just the way I wanted was SO much fun!! I want to do that whole thing again! J





Where does your inspiration come from?

I find inspiration everywhere! When I first started, I just used to look at other cakes for inspiration but I’m finding that as I go on, I see cakes in everything around me…a pattern on a family members top…a reflection on a wall….I have some seriously strange photos on my camera of things that have caught my eye!

Do you have a particular creative process when you are designing your cakes?

It depends on the project. If it’s for a client…they pretty much give me the brief and I stick to that…but if it’s a collaboration or a magazine…well…my imagination goes wild. Usually something comes to me pretty quickly and I usually don’t deviate too far from my original idea. I usually do a rough sketch, then a better one in colour, then I ‘dummy’ it up from styro or even cake tins to get a sense of proportion.
Sometimes I get stuck and head over to my trusty old friend Google….I don’t look at cakes though. I search real images for inspiration…make a sketch THEN I Google cakes in that theme to make sure it hasn’t been done before!

A lot of your fans have been wondering what your chosen medium is for creating figures and what drying time you allow?

Ahh! I LOVE Modelling Chocolate…it is brilliant for giving incredibly realistic muscle tone and facial features but it HATES our humid climate here in Australia. I use it in a 50/50 mix with Gumpaste AND Tylose/CMC then try to leave it to dry for a few days. I need someone to manufacture a humidity proof Modelling Chocolate….anyone out there?? ;)
  


How do you remain competitive and try to stand out from other decorators in such an evolving industry?

Great question! If I work it out, I’ll let you know haha! I just try to be myself…I LOVE what I do and my greatest joy is getting to share my passion with like-minded folks…I think people can see that and that makes them feel comfortable with me.
I try to always be brave and am never scared to try anything…at least once J


What hot caking trend are you in love with at the moment?

I know I’m LOVING the Wafer Paper trend! So much fun! I’m hoping we will see a trend towards brighter colours soon…I struggle with wishy washy haha!


If you had to give one piece of advice to a fellow cake decorator what would it be?

Don’t sell yourself cheap! For your sake and your peers! None of us will be able to be paid what our time and talent is worth when there are people out there willing to give their cakes away. They won’t last because they will get burnt out or go broke, but the damage they do to the industry is massive. No one wants to work for hours on end for a couple of dollars an hour. It’s hard work and time away from your family so it has to be worthwhile.

You have released your first tutorial, that’s very exciting, can you tell us a little bit about that?

I made a cake for a lovely client and as I was designing it, I thought that it might appeal to quite a few people as a tutorial. I had wanted to do one for so long…so I took photos every step along the way. It probably would have just sat there for a few years but then I got an email from my cousin inviting me to my beautiful Aunty and Uncle’s 50th Wedding Anniversary in New Zealand. It was right before Christmas so a trip wasn’t really in my budget…so I thought; why not put that tutorial together and see if anyone buys it? It was SO nerve wracking but very exciting. I put it online and went to bed…I couldn’t bear the thought of sitting there watching one or worse NONE sell, so I chickened out and off I went. When I looked the next morning, I had sold 51 overnight!! Relief!! In the end, I sold enough to get me to New Zealand to be with them and I took a cake haha!



What Cake Decorating classes are you currently running?

I’m so excited about my upcoming classes! I am going to be doing some classes at some independent venues in Australia that I’m really looking forward to and I’m also going to be travelling to the UK to teach at Cake Camp and Richard’s Cakes! SO exciting!! AND I will be travelling around Australia and New Zealand doing classes as part of the Bake Boss team!! Hopefully we will have lots of dates to announce very soon…I can’t wait! J




What's one technique that you wish you saw more of in cake decorating?

Hand painting! I ADORE it and so many people, including myself, are scared of painting on cakes…but I think we should all do it more! THAT’s true edible art right? J

Do you have a most memorable cake decorating disaster?

My most memorable is actually not my biggest disaster because I salvaged it haha! I took almost 2 weeks to make roses for a magazine submission…I made close to 100…put the whole thing together, rang the photographer to tell him it was ready, then promptly dropped it….now down to 72 roses!! I had to walk away for 5 minutes…I thought I would have a breakdown but I just walked off, calmed down and went back to survey the damage. I quick juggle round of some roses and repair of some petals and voila….I still haven’t replaced those broken roses ;)

Marianna's Caking Me Crazy Show Cakes 2014

Behind the scenes I have been quietly working away on many entries for the local show, here are some pictures for you. 

 Lady Victoria was entered into the Dolly Varden section and is completely made out of gumpaste, fondant and edible lace. 

I wanted to give our Lady Victoria an unique look using modern cake decorating techniques, rather than a more traditional look. The face turned out exactly how I wanted with an animated style.  



My cakes pops are certainly frosted indulgence! They're mudcake covered in fondant accentuated with silver leaf and white flowers with silver leaf centres. These were also an original design by Marianna's Caking Me Crazy. I just wanted them to have an elegance about them, where people could simply not stop looking at them. 


Our Cupcakes were designed using inspiration from Buns in the Oven Cupcakery. I loved Sheryl Bito's style and wanted to recreate one of her designs, but still using my own features and ideas. 


My most favourite entry of all was my wafer paper cake. Completely original I wanted this design to be dedicated to my mum as I really love her and we don't live close together so I miss her a lot (even though I probably ring her 6-10 times a day! Sorry mum!!). 
So for this cake I thought of things that were a representation of us and our relationship over the years. 

The flower is big, bold, strong, prominent and overshadows everything, this represents my mums and my relationship- simply unbreakable. The butterflies on the cake are a reminder of all the new fun beginnings and milestones we have achieved together over 29 wonderful years (ok I'm not 29 for another few weeks, just for the record).





And being a mum myself I am super proud! My eldest daughter took it upon herself to enter the pre primary section of the show this year. I was a very proud mum as I watched her guarding her cupcakes as the steward popped them into the cabinet. All day she kept asking me if they were going to be ok there and she was worried someone may have eaten them. Too precious. 



We shall let you know what the results are as they come to hand!

The Cake Dutchess goes live on Youtube

I have always been a huge fan of the sugar modelling paste artist, Cake Dutchess.

Her fondant characters are so captivating and expressive in the way they are crafted, that you could imagine each adorable creation having its own little sugary personality. There's really no way you could contemplate ever eating them (well I know I couldn't).

 I have been following the Cake Dutchess on Facebook for quite a few months now and one thing I love about her is that she uploads tons of fantastic picture tutorials.

 They are projects that anyone could attempt no matter their level of skill. It impresses me how the Cake Dutchess shares her knowledge of cake decorating enthusiastically to help others improve on their own skills.

Painted Wafer Flower an Original Design by Marianna Saran

Potato starch, vegetable oil and water are my new found friends.  No I haven’t gone on a frenzy diet of carbs, I am talking about wafer paper.
Wafer paper has hit the cake decorating industry by storm and I have to say I am one of the people that have been fascinated by the stuff.
If you haven’t heard of it… wafer paper comes in thin transparent sheets. When dry it is brittle and can crack easily, but if it gets wet it instantly dissolves. So you really need to find a happy medium.

I have been experimenting with wafer paper a lot and curiosity has got the better of me. I wanted to see if I could paint the wafer paper by directly applying gel colour to it- would it be too wet and make it dissolve? Turns out I was onto something!
I made these little babies and I think they look stunning… you could use this technique on anything to do with wafer. To show you how easy it is, I have created this tutorial to show you how you can paint directly onto your wafer paper to get cool effects for any of your cakes!!

What you will need is:
  • Wafer paper (really who would have thought)
  • A flower cutter of your choice
  • A small piece of sponge
  • Gel colours of your choice
  • A paint brush
  • A small piece of fondant- it can be any colour o suit your flower
  • Piping gel.

To start off your flower use your cutter and press it into the wafer paper, firmly but gently. If you do it too hard you’ll crack the paper. I have chosen to do three layers for my flower so have impressed the pattern three times on the wafer.

Now it’s hard to photograph, but by doing this the outline of the flower will be indented in the paper.
Using the line as a guide cut out your three flower shapes. Don’t be too concerned if they are not perfect or a little rough around the edges, we all know that’s what defines and makes flowers special.
Once you have your shapes, lay them on a piece of paper ready for painting.

Choose two (or more) colours that you would like to use and pop a dot of each colour on a plate- DO NOT ADD ANYTHING TO THE COLOUR, if you use a thinner your wafer will dissolve.
Cover your sponge alternating the colours, this is how you will get your mottled effect. Be sure it’s a thin layer on the sponge. You don’t want to overload it because too much gel paste will also dissolve the wafer.

Lightly press your sponge onto the wafer randomly, flip them gently and do the same on the back.

To bring out the flower and give it a little personality I decided to add some gold highlights. Add some gold to your smaller sponge and gently press it onto the wafer as you did for the other colours in the previous step.

To assemble your flower, on your paintbrush get a tiny amount of piping gel and brush lightly in the centre. Place your second layer on. Repeat this step to place the third layer on top.

Because the gel paste adds slight moisture to the wafer paper, it will make it flexible. Give your petals a slight roll inward to create movement in your flower.

Create a centre for your flower by rolling a small amount of fondant. I have decided to bejewel this one with some white pearls, which I have attached with piping gel. Depending on the look you are going for you could simply paint it or leave your fondant plain.

Attach your centre with another dot of piping gel and there you have it your personally designed wafer paper flowers. I can imagine these gorgeously flowing down the side of a cake.

The best part is they don’t take long to make and unlike fondant and gumpaste flowers there’s no drying time.
To attach your flower to a cake, using a little piping gel.

Get your Toes Tapping with Verusca Walker

It's starting to get a little chilly so why not get your toes tapping to the beat of cake decorating, with this lovely little photo tutorial of a tap dancing shoe courtesy of my lovely friend Verusca Walker. 











Why not alter your project into a mens shoe? They would be a perfect touch to a birthday or celebration cake for a special corporate dad out there! You could easily achieve it by simply leaving the "metal taps" off your shoe.
